Our Aged Asiago DOP develops a dry, straw-colored paste with a yeasty aroma of dried fruits and a savory flavor following 6 months of aging. This aged Asiago is revered for its versatility and taste. Its creamy, tangy taste and crumbly interior intensify as it ages. Asiago DOP is crafted on the picturesque plateau in the foothills of the Dolomite range of the Italian Alps. The milk of heritage breed cows, collected from the lowland pastures of the Po River Valley and the high alpine meadows of the Asiago Plateau, is used to produce IL Villaggio Aged Asiago, DOP. It must be made with the milk of heritage Pezzata Nera and Bruna Alpina cows. It can be made only in four provinces of northeastern Italy: Vicenza, Trento, and sections of Padova and Treviso. IL Villaggio Asiago comes exclusively from farmers in this region that provide their milk to the Asiago dairies of the GranTerre cooperative. This cooperative farming structure ensures fair wages are paid to, improves consistency of the quality of the milk, and contributes to the long-term sustainability of the pastoral Italian lifestyle.
How to Use
Asiago’s smooth, compressed and crumbly texture make it ideal for grating over and into pasta dishes, risotto, polenta and gratins. Stir it into soups, and sauces. Try baking it into cheese sticks, puffs and crisps. Blend it with breadcrumbs for stuffings and for coating foods to be fried or baked.KEY FACTS:
