IL Villaggio Parmigiano Reggiano DOP is aged for a minimum of 24 months and features a rich, complex flavor, nutty aroma and a crumbly, slightly grainy texture. It is still hand-made without any additives, just as it was nine centuries ago. The milk must come from, and the cheese must be made and aged exclusively within the provinces of Parma, Reggio Emilia, Modena, the left bank of the Reno River in Bologna and the right bank of the PO River in Mantua. IL Villaggio Parmigiano Reggiano comes exclusively from farmers in these regions that provide their milk to the dairies of the GranTerre cooperative. This cooperative farming structure ensures fair wages are paid to, improves consistency of the quality of the milk, and contributes to the long-term sustainability of the pastoral Italian lifestyle.

How to Use

Serve it is as part of the antipasti with a drizzle of honey or Traditional Balsamic Vinegar. Grate it over pastas, into risotto. Stir it into your meat ball mix, stuffings for vegetables or clams oreganata. Shave it over salads, steamed asparagus, fava beans or beef carpaccio. Use to enrich sauces, soups and ragus.
