Crispy Parmesan Smashed Potatoes
These potatoes are oven baked until they are crispy crunchy. Then they are slathered with butter and sprinkled with IL Villaggio Parmesan and baked a bit longer, until they are crusty. Finally, they get showered with crumbled bacon. Boiling then smashing the potatoes increases their surface area so that they get crisper and hold more cheese. This is a great side dish and a wonderful half-time snack that everyone will enjoy.
Prep Time: 20 minutes • Cook Time: 25 minutes

Ingredients (Serves 4-6)

  • 1 lb baby yellow potatoes
  • 1 Tbsp olive oil
  • Salt and pepper
  • 1 Tbsp butter, melted
  • 3/4 cup IL Villaggio Grated Parmesan
  • 4 strips thick cut bacon, cooked
  • 1 Tbsp chopped fresh chives

Instructions

Preheat oven to 450 degrees.

Fill a large pot with water and bring to a boil. Add potatoes and cook until fork tender, about 15-20 minutes. Drain well and pat completely dry with a kitchen towel.

Lightly grease a baking tray and place potatoes evenly on the tray. Using the bottom of a glass or mug, smash the potatoes down, being careful to keep them in one piece. Brush potatoes with olive oil and season with salt and pepper.

Bake for 15-20 minutes or until crisp. Remove from oven and brush with melted butter. Top with IL Villaggio Parmesan cheese and return to oven for 3-5 minutes. Remove and top with crumbled bacon and fresh chives. Serve warm.
