Next-Level Spaghetti
Don’t let its simplicity trick you—this bright pasta, made with only a handful of ingredients, is full of fresh, incredible flavor.

Ingredients (Serves 4)

  • 8 ounces spaghetti
  • 1/4 cup olive oil
  • 2 pints cherry tomatoes
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • IL Villaggio Twist & Grate Grana Padano DOP

Instructions

Bring a large pot of heavily salted water to a boil. Cook pasta according to package directions, until al dente. Reserve 1/2 cup pasta water and drain.

Heat the olive oil in a large skillet over medium heat. Add the cherry tomatoes and cook until softened, stirring occasionally, about 5 minutes. Add the garlic, salt, and pepper to taste, and cook until fragrant, about one more minute. Using the back of a spoon, break up the tomatoes to release their juices. Continue cooking until the tomatoes burst and create a sauce, about 5 more minutes.

Place the drained pasta on top of the tomato sauce and toss to combine. Add as much of the reserved pasta water as needed to reach the desired consistency. Serve topped with a generous amount of Il Villaggio Twist & Grate Grana Padano to bring it to the next level.

  • The best quality dried pasta will have just one or two ingredients—usually durum wheat semolina and water.
  • Salt your pasta water liberally—it should be as salty as the sea.
