Piave Zucchini Egg Bites
These protein and veggie-packed egg muffins made with IL Villaggio Piave DOP make an excellent start to any day.

Ingredients (Serves 12)

  • 2 large zucchinis
  • 12 large eggs
  • 1/3 cup heavy cream
  • 1/2 cup grated IL Villaggio Piave DOP
  • 1/2 cup cherry tomatoes, diced
  • 1 large shallot, diced
  • Salt and pepper

Instructions

Preheat oven to 350 F degrees.

Grease a muffin tin with olive oil or spray with cooking spray. Set aside.

Using a vegetable peeler, carefully peel the zucchini into long strips. Take one strip and wrap it around itself to create a circle. Wrap a second strip around the outside, then a third to create a flower. Place the zucchini flower in the center of the muffin tin. Repeat until all tins are filled.

In a medium bowl, combine eggs, heavy cream, and IL Villaggio Piave. Whisk until fully combined. Season with salt and pepper. Add cherry tomatoes and shallot. Pour mixture into the muffin tin over the zucchini flowers.

Transfer to oven and bake for 17-20 minutes, or until the egg is set. Remove and allow to cool 5 minutes before removing from tin. Top with more IL Villaggio Piave, if desired.
